I haven't eaten banana ice cream or dates for about a month now due to starting the low FODMAP diet and I'm honestly really missing them. I never got around to posting the recipe for this incredible sticky date banana ice cream I had a while ago so I'm finally doing it now, and making myself extremely jealous in the process! The dates are like little chunks of caramel in the 'ice cream' and as you probably know by now the combination of bananas and dates is one of my favourite - in the past I've made banoffee oatmeal, baked banoffee oatmeal, banoffee overnight oats, banoffee buckwheat pancakes, a banoffee pie oatmeal parfait and a banana chia seed pudding with date caramel. This recipe is super simple but ridiculously tasty, and will leave you feeling like you've just eaten dessert for breakfast!
Ingredients
Serves 1
- 4 ripe frozen bananas*
- 3 - 4 Medjool dates
- 1/4 cup non-dairy milk**
* everything tastes better with ripe bananas and they're a lot easier for your body to digest. Peel and chop them into bite-sized pieces before freezing them. You can also use more than 4 if you want a larger meal, we all have different nutritional needs!
** you may be able to use less liquid (or even none at all) depending on the strength of your food processor. Mine is quite small so I need a bit of liquid to help get everything moving.
Method
Chop the dates into small pieces and place them aside for the time being. Put the frozen banana chunks into your food processor or high-speed blender (you may want to leave them for about 10 minutes before you start blending so it's easier for your processor to break them up) then add your non-dairy milk (if using) and blend the bananas until they're a smooth and creamy consistency (it usually takes 8 - 10 minutes for me). You may need to stop the motor every minute or so to make sure your machine doesn't overheat - you can also break the banana up a bit with a spoon to ensure it all blends in properly. Once it's smooth add the chopped dates and pulse a few times to incorporate them, then transfer the ice cream into a bowl and enjoy!
